Sirloin Salad
 
 

1 Cup diced english cucumbers

1 cup diced seeded tomatoes

1 cup crumbled feta cheese

1/2 cup thinly sliced red onions

1/2 cup coarsely chopped black olives

1/4 cup chopped fresh flat-leaf parsley

Salt and pepper to taste

1/4 cup extra virgin olive oil

1/4 cup red wine vinegar

Combine the cucumber, tomatoes, feta, red onion, olives and parsley in a large bowl.  Season with salt and pepper.  Toss with vinegar and olive oil.  Set aside.

Salt and pepper 1 1/2 pound sirloin steak, (1 1/2 inch thick) on both sides.  Preheat a lightly oiled grill.  Grill the steak until well-seared and well-browned on the first side, about 4 minutes per side for medium-rare meat.  Remove steak to a cutting board and let rest for 5 minutes.  Carve into generous 1/2 inch slices and dived among 4 dinner plates, top with salad.
