| Spice Rubbed Chicken | |

8 cloves garlic, pressed 1/2 tablespoon black pepper 1/2 tablespoon ground coriander 1/3 cup fresh cilantro, finely chopped 2 tablespoons lime juice 1 tablespoon smart balance or Enova oil 4 boneless, skinless chicken breast half In small bowl, thoroughly mix all ingredients, minus the chicken. Rub half of spice mixture all over the chicken on one side. Cover chicken and refrigerate along with remaining rub mix. Preheat grill. Place chicken rub side down on the grill, rotating if necessary to prevent chicken from burning, don't flip onto other side. Once the chicken is cooking, use a barbecue brush to spead remaining rub on the top of the chicken. Cook about 5 minutes per side.
